How to Bounce Back from an Unhealthy Weekend

It's easy to bounce back from an unhealthy weekend of eating and feeling out of balance. Here are some great tips to assist you on getting back in track after a hectic (but fun) weekend.

Step 1: Forgive yourself! There is nothing worse than beating yourself up black and blue for eating poorly and loosing your balance. Get over it! (I say that with love in my heart:)) Start your day fresh by focusing on what you want and letting go of the past.

Step 2: As soon as you forgive yourself, set a new intention for your day, your food and your attitude. For example:"I intend to eat well today. I intend to let go of sugar and alcohol today." An intention is equivalent to placing your hands on the drivers wheel of your life. When you know your intentions, you are deliberately and powerfully creating, crafting and producing your glorious life!

Step 3: Eat healthy! Make a list of all of the healthy foods and drinks you can enjoy to nourish and heal your body, mind and spirit. Here are some of my favorites:

*Kombucha is a handmade Chinese tea that is delicately cultured for 30 days. It is an amazing power house of active enzymes, probiotics, amino acids and antioxidants. You can buy Kombucha at your local health food store. I love GT Dave's, Gingeraid kind the best.

*Good old fashioned oatmeal with fresh fruit, walnuts and a tidbit of maple syrup.

* Organic fresh juiced vegetable juice either home made or from the health food store's juice bar. My favorite is a beautiful blend of cucumber, ginger, spinach, beets, celery and parsley.

* A large organic green salad with organic olive oil.

And my all time favorite back to basics dinner is *stir fried Kale,carrots, peppers, onions, garlic and more kale!

Now write your list.

Step 3: Sweat! Exercise your body to release the old toxins, cleanse the skin and purify the body, mind and spirit. I love Bikram yoga!

How to Be Pulled Into Your Future with Joy and Delight By Amanda Moxley This is a Picture of a Labyrinth I walked in Southern Utah. Step 1: Dream BIG and imagine your ideal life. Step 2: Write about your BIG dream in your journal. You can categorize your ideal life into different segments such as Home Cooking and Healthy Eating, Your Ideal Body, Your Ideal Relationship, Travel and Adventures, Education and Self Improvement Classes (like my 30 Day Whole Body and Mind Cleanse and my 30 Days to the Best Body and Life of Your Dreams Program), Abundance and Finances, Giving and Sharing, Your Career and Dream Job, etc. Step 3: Enjoy picking pictures, phrases and words out of your favorite magazines. Clip pictures that really jazz you up and get you super excited about your future. Step 4: Get a paper board in a color that calls to you. (Mine is yellow.) What color is yours? Step 5: Breathe and take your time gluing your pictures onto your board. It may take you a month. Don't rush, take your time and enjoy your vision board journey! Step 6: Here is a really cool tip: Harness the power of the Universe by creating your Vision Board on the New Moon. The New Moon is a wonderful time to birth new ideas, dreams and visions. Then on the full moon take your Vision Board outside and bake it in the moonlight. (Feel the beautiful moon energy charging your Vision Board with love and light.) Step 8: Hang your Vision Board where you will see it every day. Find a special wall in your bedroom, office or kitchen. Mine is on the wall next to my bed. It is the first thing I see when I wake up in the morning. My Vision Board pulls me out of bed and gets me excited about my life in a really positive way. Step 9: Look at it daily, close your eyes and visualize your ideal life. Get into the feeling of what it would feel like if your vision was a reality now. Step 10: Keep adding to it. If you see some pictures that really juice you up add them to your board as you move through the year. Step 11: Take your Vision Board down when the time is right, put the date on it and store it somewhere special. Be grateful for your Vision and the amazing Universe and make a new one! Creating your vision is a VERY powerful way to pull you forward into your future. It allows you to become crystal clear on your vision, hopes, dreams and desires for the year. Genetically Modified Sugar? Not So Sweet

     

GE Sugar? Not So Sweet                      Dear Amanda,          This Valentine’s Day, as you open up that heart-shaped box of candy and taste those chocolate covered crèmes, nougats and truffles, enjoy them. And unless you’re one of the few who doesn’t eat chocolate, there’s no denying that sugar is the taste of Valentine’s Day.  Sadly, biotech companies want to take the sweets we know and love away from us. Sugar in our Valentine’s candy (and our cereal, granola bars, crackers, bread – anything that contains sugar) comes from several sources, including sugar beets. In fact, about half of the sugar used in the U.S. is beet sugar (the other half is cane sugar). In the next few weeks, sugar beet seed farmers throughout the U.S. will be considering what type of sugar beets to plant, and food companies will have to decide what types of sugar they will accept.  A new option available this year is Monsanto’s Roundup Ready sugar beet, genetically engineered to survive direct application of the weed killer, Roundup. Unlike traditional breeding, genetic engineering creates new life forms that would never occur in nature, creating new and unpredictable health and environmental risks. To create GE crops, genes from bacteria, viruses, plants, animals, and even humans, have already been inserted into our common food crops, like corn, soy, and canola. Now the biotech industry has taken aim at our sugar. At the request of Monsanto, the U.S. Environmental Protection Agency increased the allowable amount of glyphosate residues on sugar beetroots by a whopping 5000%.  Glyphosate is the active ingredient in Roundup, sugar is extracted from the beet’s root.  The inevitable result is more glyphosate pesticide in our sugar.  This is not good news for those who want to enjoy their sweet treats without the threat of ingesting toxic weed killer. In 2001, Hershey’s, M&M Mars, and American Crystal Sugar told consumers they would not use genetically engineered sugar. But now that sugar beets are close to being planted commercially, they have made no such assurances. Tell Hershey’s, Mars, and American Crystal to show us the love, and keep our sweets GE-Free!                                                  Sign this petition :                           In 2001, Hershey's, M&M Mars, and American Crystal Sugar told consumers they would not use genetically engineered sugar. But now that sugar beets are close to being planted commercially, you have made no such assurances. As a customer, I am very disappointed. As someone who actively avoids genetically engineered ingredients due to the threats they pose to human health, family farmers and the environment, I have always looked to sugar as one of the few ingredients I could count on to be GE-free, unlike corn syrups and some other sweeteners. Without labeling of GE products, I have to rely on companies that have publicly stated that they will avoid GE ingredients in order to make my purchasing decisions. I will not buy products that include sugar that may be genetically engineered. For this Valentine's Day, show me the love by continuing the opposition you voiced in 2001, and do not accept genetically engineered beet sugar for your products.

Life is Amazing

Happy Day after Valentine's day!

We had a fabulous three day holiday in Jackson Hole skiing, eating local foods and sharing good times with friends. Here is a picture of my "hot" hubby, Johnn on his 32nd Birthday. We hiked up Teton Pass and skied down in the twilight.

I highly recommend that you plan a mid winter holiday to rejuvenate and nourish yourself. You can plan one night at a Spa or book a flight to the beach for a few days. You will return juiced up and ready to rock!

Stuffed Roasted Acorn Squash

Stuffed Roasted Acorn Squash

This is amazing! You are going to love it! I love hearing from you!

Prep Time: 10 minutes
Cooking Time: 45 minutes
Yield: 4 servings

Ingredients:
2 acorn squash
2 cloves garlic, minced or pressed
2 tablespoons olive oil
sea salt and pepper

Stuffing
1 cup cooked whole grain (quinoa, brown rice, millet, barley)
1 onion, finely diced
1 zucchini, diced
1/4 cup golden raisins or currants
1/2 cup toasted pumpkin seeds, chopped
1/2 cup parsley, chopped
3 teaspoons curry
1 tablespoon olive oil

Directions:
      1.  Preheat the oven to 375 degrees.
      2.  Cut acorn squash in half and clean out seeds and fibers. Cut a very thin slice off the bottom, so that the
           acorn squash halves can sit flat like soup bowls.
   3.  Brush with olive oil, and spread garlic evenly over the 4 bowls, sprinkle with salt and pepper, place on a
        baking sheet and bake for 35 minutes.
      4.  While baking, in a skillet sauté onion, curry and raisins for 3 minutes. Add cooked grains and stir for 5
           minutes.
      5.  Remove skillet from heat and mix in parsley and zucchini.
      6.  Fill each squash bowl with stuffing and top with chopped pumpkin seeds and bake in the oven for 15-20
           minutes or until the squash is soft (when a butter knife sinks into the squash with ease). Serve warm.

Kale and Cabbage Sautee

Ingredients

¼ of a head of cabbage shredded

3-4 leaves of kale (don’t use the stem)

2T butter  or olive oil

Sesame seeds

~Melt butter or olive oil in a large sauté pan and throw in the cabbage and the kale. 

~Cook to your liking of “doneness” just not too over cooked!

~Sprinkle with sesame seeds
